    20210703 Iive recipes 特別鳴謝Easycook 義工團做的食譜,辛苦晒 豬肉丸 📌材料: 豬柳500g, 冬菇3個(蒸熟切粒) 薑,蔥適量,碎冰少許 📌調味料: 黑胡椒半茶匙,鼓油二湯匙,麻油一茶匙,紹酒一茶匙,糖少許,栗粉一湯匙半,菇粉一茶匙,冰一粒(打碎) 做法:📌豬柳切細放攪拌機內打爛 📌薑蔥放入冰水,用手搓揉至出味,不要渣,只取用2湯匙半薑蔥水,2隻已切碎冬菇,冰2粒(打碎)加入攪拌機內與豬柳打勻 📌打勻後加入調味料與一隻切碎冬菇再打勻 📌用手與湯匙將肉醬搓成圓球放滾水中慢火煮至肉丸浮面即表示熟,撈起放入冰水中降溫 📌肉丸盛起放碟上,灑上蔥花即可 備註:📌煲肉丸的水加麻油,鼓油,蔥便成好味的湯底 Mushroom Pork Balls (CNglobal video starts at 4:08. Skip to 9:46, and 17:59.) Ingredients: Pork tenderloin - 500g (Cut into pieces.) Dried Chinese mushrooms - 3 (Soak to rehydrate, steam for ½ hour, and cut into pieces.) Ice - 2 cubes (Crush into small pieces.) Green onion and ginger water ingredients: Green onion - 1 stalk Ginger slices - 2 Ice cold water - ½ cup use only 2 ½ tbsp Seasoning ingredients: Light soya sauce - 2 tbsp Sesame oil - 1 tsp Shaoxing wine - 1 tsp White pepper - ½ tsp Black pepper - a sprinkle Sugar - a pinch Mushroom powder - 1 tsp Corn starch - 1 ½ tbsp Ice cube - 1 cube (Crush into pieces.) Garnish ingredient: Minced cilantro Methods: 1. In a bowl, soak green onion and ginger slices in ½ cup of ice-cold water until the flavor has released into the water. This is the green onion and ginger water. Set aside. 2. In a food processor, add in pork pieces, green onion, and ginger water, Chinese mushroom pieces, and blend until smooth. 3. Add crushed ice cubes into the food processor and blend until smooth. This will cool down the temperature of the food processor and create the bouncy texture of the pork balls. 4. Add in all seasoning ingredients and blend well. 5. Transfer pork mixture to a bowl. Set aside. 6. Bring a pot of water to a boil, turn it off, and cool down to lukewarm. 7. Gather a handful of pork mixture in one hand, gently squeeze into a ball shape through the thumb and index finger, and scoop it away with a wet spoon with your other hand. 8. Place gently into the lukewarm pot of water set on SIMMER heat. DO NOT place in boiling water. 9. Continue with the rest of the pork mixture and cook until they are done or float to the top for about 10 minutes. You can use the broth for other cooking purposes. Adding soya sauce, sesame oil, and green onion can be used as a soup base. 10. Transfer cooked pork balls into another bowl filled with ice-cold water. 11. Drain well and transfer to a serving plate, and garnish with minced cilantro. Serve. ⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐ 涼拌雞髀菇 材料 📌 雞髀菇2個 📌 鹽少許 📌 紹興酒少許 醬汁材料 📌 葱適量 📌 蒜頭適量 📌 辣椒適量 📌 芫荽適量 📌 蠔油1茶匙 📌 醋少許 📌 砂糖半茶匙 📌 麻油少許 📌 豉油1茶匙 做法: 1. 葱,蒜頭,辣椒,切粒。芫荽切碎。 2. 大鍋煲水,同時用削皮刀直接削雞髀菇片落水中,再加鹽及紹興酒,滾至雞髀菇軟身。 3. 準備一大碗凍水,把已軟身的雞髀菇加入在凍水內,之後瀝乾所有水份,轉放在大碗裡,備用。 4. 準備鑊,燒紅鑊,加入油,燒滾油。 5. 準備大碗,加入葱粒,蒜粒,辣椒粒,芫荽,再把已燒滾的油倒入,撈勻,再加入蠔油,醋,砂糖,麻油,豉油,撈勻。此時可試味,按自己喜好調較味道。 6. 把已調較好步驟5的醬料加入雞髀菇裡,撈勻,再轉在碟上,即成。 提示 1. 如果用陳醋就不用加砂糖 King Trumpet Mushroom Cold Dish (CNglobal video starts at 26:05.) In a pot, add in water, king trumpet mushroom slices, salt, Shaoxing wine, and bring to a boil and blanch until the mushroom slices are soft. 2. Transfer the mushroom slices into a bowl filled with drinkable ice-cold water. 3. Drain the water and pat dry or use a salad spinner. Transfer to a bowl. 4. In a bowl, add in chopped green onion, minced garlic, minced red chili, chopped cilantro, and pour very hot oil over them. 5. Add in oyster sauce, Chinese black vinegar, sesame oil, light soya sauce, and mix well. Taste test now and add more seasonings if necessary. This is the dressing. 6. Pour dressing over the cooked king trumpet mushrooms and mix well. Transfer to a serving plate. Serve. ⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐ 優格蛋糕 材料: 蛋白 4隻 蛋黃 4隻 砂糖 4湯匙 無糖原味優格 400 克 粟粉 3湯匙 做法: 1) 蛋白用廚師機打發至硬身後,把已打起的蛋白轉放入另一個盛器內,放入雪櫃備用。 2) 蛋黃放入打過蛋白的盆內,加入沙糖,用廚師機打至淡色及糖完全溶化後,加入優格及粟粉,再開機打至均勻。 3) 從雪櫃取出打發好的蛋白,分3次拌入蛋糊內。每一次必須拌勻後才可再加入蛋白。 3) 把拌勻後的蛋糊倒入已舖焗盆紙的糕盆內,放進已預熱170 ℃ 焗爐內焗30分鐘後關火,不要打開焗爐的門, 留在焗爐內用餘溫多焗15分鐘後取出便可食用。 可用草莓,紅桑莓或藍莓裝飾。 Yogurt Cake (CNglobal video starts at 1:15. In a mixing bowl, add in all egg whites and beat until firm peak. 3. Transfer to another bowl and put it into the refrigerator NOT the freezer. 4. In a mixing bowl, add in all egg yolks, sugar, and beat until pale yellow and sugar has melted. 5. Add in unflavored/unsweetened yogurt, corn starch, and mix well. 6. Bring the egg white out from the refrigerator and add into the egg yolks mixture bit by bit and mix well. 7. Pour cake batter into an 8” or 9” cake pan lined with parchment paper. 8. Bake for 30 minutes, turn off the oven, and let the cake sit inside the oven for 15 minutes. DO NOT open the oven during the 15 minutes to avoid shrinkage. 9. Cut into slices and serve with icing sugar and assorted berries. Can be served cold as well. ⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐⭐ 混醬肥牛 食材: 肥牛(洗淨後索乾水分和切薄片) 洋蔥 1大個 京蔥1條 蔥4片 蒜片適量 醋2滴 蠔油 1湯匙 粟粉2茶匙(加1湯匙水撈勻做茨) 混醬材料: 麻油 1 湯匙 紹興酒 1湯匙 豉油 1湯匙 黃豆醬 1茶匙 豆粄醬 1茶匙 柱侯醬1/2茶匙 海鲜酱 1茶匙 辣椒粉1/4 茶匙 糖1/2茶匙 辣油 適量 水1湯匙 (將以上醬料捞匀備用) 做法: 1.燒熱個鑊加油, 加入薑片及蒜片一起炒匀 2.加入洋蔥再一起炒幾下 3.加入混好的醬再炒, 可隨意加辣油另加2滴醋 4.加入肥牛片用大火炒匀. 再加入京蔥 5.加蠔油再炒匀,然後再倒入粟粉水打茨後, 可上碟. 加上莞茜裝飾。完成! Mixed sauce ingredients: Sesame oil - 1 tbsp Shaoxing wine - 1 tbsp Light soya sauce - 1 tbsp Soya bean sauce - 1 tsp Chili bean paste (“doubanjiang”) paste - 1 tsp Hoisin sauce - 1 tsp Chu Hou paste - ½ tsp Chili powder - ¼ tsp Sugar - ½ tsp Chili oil - to taste Water - 1 tbsp (Mix all the ingredients in a bowl.) Garnish ingredient: Minced cilantro Methods: 1. Heat up a wok, add oil. Add in ginger slices, garlic slices, and stir fry until fragrant. 2. Add in white onion and stir fry briefly. 3. Add in all the mixed sauce ingredients and stir fry until fragrant. 4. Add in 2 drops of vinegar and optional to add more chili oil. 5. Add in the beef slices and stir fry quickly on HIGH heat. 6. Add in Chinese leek slices and mix well. 7. Add in 1 tbsp of oyster sauce, mix well, and in cornstarch and water to thicken the sauce. 8. Transfer to a serving plate and garnish with minced cilantro.     煮紅+白米不用浸: 用多些水先煮紅米滾10-15分鐘,然後加入白米, 當然煲內的水要足夠煮白米, 如不夠水當然可以加水.**紅米不吸水**, 正常煮, 那煮出來的紅米是不硬的.
